
Strawberry Rhubarb Mocktail

Spring has sprung and what better way to enjoy the season change than with Rhubarb - a fleeting spring vegetable with bright pink stalks. It can taste sour, but when you cook it with sugar it can become pleasantly tart. Rhubarb loves to be paired with strawberries, they're BFFs! Making this mocktail from @simplyshelleyandcocktails2 the perfect spring sipper! The tartness of the rhubarb just intensifies the sweet flavor of the strawberries. The overall flavor isn't overly sweet or overly tart; it's just right.
Strawberry Rhubarb Mocktail:
- 2 oz. homemade Rhubarb syrup (recipe below)
- 4 sliced strawberries
- 1 oz. fresh squeezed orange juice
- 1 mint sprig
- 1 can Strawberry D8 Seltzer
Muddle the strawberries and 3 mint leaves in the bottom of your glass with the rhubarb syrup and orange juice. Add ice and top with strawberry D8 seltzer. Garnish with a slice of orange and mint. Cheers!!
*Rhubarb syrup: 1 cup frozen rhubarb pieces, 1/2 cup monk fruit and 1 1/2 cups water. Boil until the rhubarb has softened and the sugar has melted. Let cool, then strain and set aside for later.
